Hi guys! Top Chef Season 13 winner Jeremy Ford has blown the doors off of American Fusion in Miami! I couldn't pass up the opportunity to get a taste of his mind-blowing menu. Keep reading for my full review.

Can you eat at the bar?
Yes; in fact that is a great place for the solo diner to mix with other diners and staff. The bar is quite long and has an industrial meets art deco vibe. The bartenders are not only seriously skilled with a bottle of liquor, but they are also very affable and easy on the eyes.πŸ˜‰

Not much to look at unless you're sitting next to one of the large windows near the entrance. There is a large open kitchen window in the main dining area however, which affords you the opportunity to catch a glimpse of Chef Jeremy working his magic if you're lucky; I was on this visit.

Organic/Vegan Friendly
Yes; many of the meals are or can be made without meat; just give your waiter advanced notice.


Thyme Roasted Florida Snapper

What is good about it for the solo diner?
As someone who dines solo on the regular, it was refreshing not to receive "the look" when I showed up for my dinner-for-one reservation...alone. I was promptly seated at one of several high-tops available near the front of the restaurant. The hostess was very warm and inviting. A bottle of sparkling water (no charge) was quickly brought to my table and I was left to peruse the ambitious, albeit limited menu.
At no time during my visit to Stubborn Seed did I feel alone and/or lonely, even though I was surrounded by couples and small groups. The staff made me feel welcomed, at ease, and totally included in the overall dining experience. They were vey attentive without hovering, knowledgeable without being pretentious.
I ordered the Thyme Roasted Florida Snapper ($26) pictured above and was not disappointed. Baby carrots, parsnip, calabrain chili, and a spattering of crunchy olives perfectly complimented the flawlessly prepared snapper. The textures and flavors were breathtaking. Keep in mind that the menu is seasonal and may not be around for long; other choices were Umami Short Rib, Organic Chicken, Ingrid's Maine Diver Scallop, Butter Poached Lobster, and Wild Ora King Salmon. The meal was completed by two Snickerdoodle cookies ($8) which oozed warm chocolate-hazelnut. A more than reasonable bill for one of the best meals I've ever 'experienced' in SOFL.

What is not so good about it for the solo diner?
The noise level at Stubborn Seed is a bit on the high side. This may not be a problem for the solo diner as you won't have to shout to others who may be at your table. Even as a solo diner however, the loud music can be a turn off and distraction from an otherwise meaningful haute dining experience.

I would definitely return to Stubborn Seed. I enjoy sharing my amazing dining experiences with friends and family (yes, I have both πŸ˜„)
